The Jolly Caffè jury chose Aldo Gariboldi of Pasticceria Ondadolce as the winner of the Selezioni Toscana of Espresso Italiano Champion, the barman championship of the Italian National Espresso Institute (Inei).
The rules of the race were clear: calibrate your equipment and prepare in just 11 minutes four espresso and four perfect cappuccinos under the eyes of the technical judges. The sensorial jury operated in blind mode according to the standards of the International Institute of Coffee Tasters (IIAC).
